- 3/4 cup shredded zucchini (well-drained)
- 1 cup shredded carrot
- 1/2 cup finely chopped baby spinach
- 1/4 tsp paprika
- 3/4 tsp onion powder
- 1/2 tbsp Italian seasoning
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tbsp nutritional yeast
- 1 tbsp cornstarch
- 1 1/2 tbsp extra light olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and set it aside.
- Place the ground chicken in a large mixing bowl.
- Add the shredded zucchini, shredded carrot, and chopped baby spinach to the bowl.
- Season with paprika, onion powder, Italian seasoning, garlic powder, salt, and black pepper.
- Mix in the nutritional yeast and cornstarch until well combined.
- Scoop tablespoons of the mixture onto the prepared baking sheet, forming nugget shapes.
- Drizzle the extra light olive oil over the nuggets.
- Bake for 20-25 minutes, turning halfway through, until golden brown and cooked through.
- Allow the nuggets to cool slightly before serving to let them firm up.
