Ingredients

  • 1 lb ground chicken
  • 3/4 cup shredded zucchini (well-drained)
  • 1 cup shredded carrot
  • 1/2 cup finely chopped baby spinach
  • 1/4 tsp paprika
  • 3/4 tsp onion powder
  • 1/2 tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • 1 1/2 tbsp extra light olive oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and set it aside.
  3. Place the ground chicken in a large mixing bowl.
  4. Add the shredded zucchini, shredded carrot, and chopped baby spinach to the bowl.
  5. Season with paprika, onion powder, Italian seasoning, garlic powder, salt, and black pepper.
  6. Mix in the nutritional yeast and cornstarch until well combined.
  7. Scoop tablespoons of the mixture onto the prepared baking sheet, forming nugget shapes.
  8. Drizzle the extra light olive oil over the nuggets.
  9. Bake for 20-25 minutes, turning halfway through, until golden brown and cooked through.
  10. Allow the nuggets to cool slightly before serving to let them firm up.
