Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add shallots and garlic, sauté until fragrant.
- Push the shallots and garlic to one side of the skillet and add the eggs, scrambling until fully cooked.
- Add the cooked chicken, peas, and carrots, stir to combine.
- Add the cooked rice and soy sauce, mixing well and frying for another 3-5 minutes until heated through.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For the best texture, use day-old rice that has been stored in the fridge overnight.
