Description

A beloved dish that combines fluffy rice, tender chicken, and colorful veggies with a hint of soy sauce.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1/2 cup peas
  • 1/2 cup carrots, diced
  • 2 garlic cloves, minced
  • 2 shallots, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shallots and garlic, sauté until fragrant.
  3. Push the shallots and garlic to one side of the skillet and add the eggs, scrambling until fully cooked.
  4. Add the cooked chicken, peas, and carrots, stir to combine.
  5. Add the cooked rice and soy sauce, mixing well and frying for another 3-5 minutes until heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For the best texture, use day-old rice that has been stored in the fridge overnight.
