Description

A comforting and nourishing chicken broth filled with fresh vegetables and tender chicken, perfect for chilly evenings or family gatherings.


Ingredients

  • 1 whole chicken
  • 8 cups water
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 cup corn kernels
  • 2 tomatoes, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges for serving


Instructions

  1. Bring water to a boil in a large pot and add the whole chicken.
  2. Reduce heat and simmer for about 30 minutes.
  3. Remove the chicken, let it cool, and shred the meat, discarding the bones.
  4. Add the carrots, potatoes, onion, and garlic to the same pot, and cook until tender.
  5. Include the zucchini, corn, tomatoes, and shredded chicken back into the pot.
  6. Simmer for an additional 10 minutes, seasoning with salt and pepper.
  7. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For added flavor, use fresh vegetables and herbs. Adjust seasoning as needed.
