Description

A rich and flavorful roasted cherry tomato sauce perfect for pasta, sandwiches, or pizza.


Ingredients

  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon balsamic vinegar (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine cherry tomatoes, olive oil, minced garlic, salt, black pepper, and dried basil in a baking dish.
  3. Roast in the oven for about 25-30 minutes, until the tomatoes are softened and slightly caramelized.
  4. Remove from oven and let cool slightly.
  5. Transfer the roasted mixture to a blender and pulse until smooth. If desired, stir in balsamic vinegar for added flavor.
  6. Serve immediately on pasta, sandwiches, or pizza, or store in an airtight container in the refrigerator.
