- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 1 teaspoon balsamic vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Combine cherry tomatoes, olive oil, minced garlic, salt, black pepper, and dried basil in a baking dish.
- Roast in the oven for about 25-30 minutes, until the tomatoes are softened and slightly caramelized.
- Remove from oven and let cool slightly.
- Transfer the roasted mixture to a blender and pulse until smooth. If desired, stir in balsamic vinegar for added flavor.
- Serve immediately on pasta, sandwiches, or pizza, or store in an airtight container in the refrigerator.
Notes
Use high-quality tomatoes and olive oil for the best flavor. This sauce can be frozen in small portions.
