Description

Delightful Cherry Cinnamon Rolls filled with a sweet and tart cherry filling, perfect for sharing during brunch or cozy gatherings.

  • 1/3 cup granulated sugar (67g)
  • 1/4 cup cold water (60g)
  • 2 tbs corn starch (20g)
  • 1/4 cup warm water (60g)
  • 1 tsp active dry yeast (6g)
  • 3/4 cup whole milk (180g)
  • 1/3 cup granulated sugar (67g)
  • 2 large eggs
  • 4 1/2 cups bread flour (540g)
  • 1/2 tsp salt (3g)
  • 6 tbs unsalted butter, room temperature
  • 4 tbs unsalted butter, room temperature (57g)
  • 3 oz cream cheese, room temperature (85g)
  • 2 cups powdered sugar (260g)
  • 2 tsp vanilla extract
  • 1-3 tbs whole milk (20-60g)


Instructions

  1. Make the Filling: In a medium saucepan, combine the frozen cherries, 1/3 cup granulated sugar, cold water, and corn starch. Cook over medium heat until the mixture thickens, stirring frequently. Remove from heat and let it cool.
  2. Activate The Yeast: In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until bubbly.
  3. Make The Dough: In a large mixing bowl, whisk together the whole milk, 1/3 cup granulated sugar, and eggs. Slowly add in the yeast mixture, then incorporate the bread flour and salt until a dough forms.
  4. Knead the dough on a floured surface for about 6-8 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let it rise in a warm place until it doubles in size, about 1 hour.
  5. Punch down the risen dough and roll it out into a rectangle. Spread the softened butter and cherry filling evenly over the dough, then roll it tightly into a log. Cut the log into even pieces.
  6. Place the rolls in a greased baking dish, cover them with a towel, and let them rise again for about 30 minutes.
  7. Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown. While baking, beat together the cream cheese, powdered sugar, vanilla extract, and enough whole milk to reach your desired consistency. Frost the rolls once they’ve cooled slightly and serve warm.

Notes

For a different taste, try using raspberries or blueberries for the filling.
