Description

Ingredients

  • 1 pound ground turkey
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or taco blend)
  • 1 cup bell peppers, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Tortilla chips or tortillas for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in bell peppers and cook until softened, about 3-4 minutes.
  4. Add black beans, corn, diced tomatoes, and taco seasoning. Stir to combine and let simmer for 5 minutes.
  5. Sprinkle cheese on top and cover until melted.
  6. Serve hot with tortilla chips or in tortillas.
