Description

Cheese blintzes are delightful filled crepes with a creamy cheese filling, perfect for any family gathering or special occasion.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 2 tablespoons butter (for frying)
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • Berry sauce or fresh fruit for topping


Instructions

  1. Whisk together flour, eggs, milk, and salt until smooth. Let it rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt a little butter. Pour in a small amount of batter, tilting the pan to create a thin layer. Cook for 1-2 minutes on each side until golden. Repeat with remaining batter.
  3. Mix ricotta cheese, cream cheese, sugar, and vanilla in another bowl until smooth.
  4. Place a spoonful of the cheese mixture on the edge of each pancake, fold the sides over, and roll it up.
  5. Heat the skillet again and fry the filled blintzes until crispy and golden on all sides.
  6. Serve warm topped with berry sauce or fresh fruit.
