- 2 large eggs
- 1 cup milk

- 1 cup ricotta cheese
- 1/2 cup cream cheese
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Berry sauce or fresh fruit for topping
Instructions
- Whisk together flour, eggs, milk, and salt until smooth. Let it rest for 30 minutes.
- Heat a non-stick skillet over medium heat and melt a little butter. Pour in a small amount of batter, tilting the pan to create a thin layer. Cook for 1-2 minutes on each side until golden. Repeat with remaining batter.
- Mix ricotta cheese, cream cheese, sugar, and vanilla in another bowl until smooth.
- Place a spoonful of the cheese mixture on the edge of each pancake, fold the sides over, and roll it up.
- Heat the skillet again and fry the filled blintzes until crispy and golden on all sides.
- Serve warm topped with berry sauce or fresh fruit.
