- 1 large head cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheese (cheddar or a mix)
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional)
- Pinch of nutmeg (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for 5–6 minutes until just tender.
- Drain the florets and set them aside in a baking dish.
- Melt the butter in a saucepan over medium heat.
- Whisk in the flour, stirring constantly for about 1 minute until golden.
- Gradually pour in the milk, continuing to whisk to prevent lumps.
- Cook the sauce for about 5 minutes until it thickens, stirring frequently.
- Remove the saucepan from heat and stir in the shredded cheese until melted and smooth.
- Season the cheese sauce with salt, pepper, and nutmeg if using.
- Pour the cheese sauce evenly over the cauliflower in the baking dish.
- Sprinkle breadcrumbs on top if desired for an added crunch.
- Bake for 20 minutes until the top is bubbly and golden.
- Allow to cool for a few minutes before serving.
Notes
For an extra cheesy experience, add more cheese to the top before baking.
