- 4 oz fresh mozzarella cheese, sliced
- 1 large tomato, sliced
- Fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze (optional, for drizzling)
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally, but not all the way through.
- Marinate the chicken with olive oil, salt, and pepper for about 30 minutes.
- Stuff the chicken breasts with slices of mozzarella, tomatoes, and fresh basil leaves, arranging them in the pocket.
- Place the stuffed chicken in a baking dish and drizzle with a bit more olive oil.
- Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Remove from the oven and let rest for a few minutes before serving. Drizzle with balsamic glaze if desired. Enjoy!
