- 1 cup brown sugar
- 1/2 cup heavy cream
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Beat in the egg and vanilla until well combined.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually blend the dry ingredients into the wet mixture, then fold in the butterscotch chips.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Allow cooling completely.
- Beat butter until creamy for the buttercream, then gradually blend in powdered sugar and heavy cream, followed by butterscotch flavoring.
- Spread the buttercream on cooled cookies.
- Combine brown sugar, cream, butter, vanilla, and salt in a saucepan over medium heat to make the caramel sauce. Stir until thickened.
- Drizzle caramel sauce over frosted cookies before serving.
