Description

A warm and flavorful Mediterranean Breakfast Sandwich featuring crispy bacon, rich cheeses, and sun-dried tomato aioli, perfect for a hearty morning meal.


Ingredients

  • 4 large Eggs
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Mozzarella cheese, grated
  • 4 slices Bacon
  • 2 tablespoons Sun-dried tomato aioli
  • 4 slices Bread (ciabatta or bagels)
  • Optional: Fresh spinach or arugula


Instructions

  1. Cook the bacon in a skillet until crispy. Remove and set aside.
  2. In the same skillet, scramble the eggs until cooked through. Season with salt and pepper.
  3. Toast the bread until golden brown.
  4. Spread sun-dried tomato aioli on the bread.
  5. Layer scrambled eggs, bacon, Parmesan, and mozzarella on top of the aioli.
  6. Optionally, add spinach or arugula.
  7. Top with another slice of bread if desired, cut in half, and serve. These sandwiches can be made ahead and frozen for easy breakfasts.

Notes

For extra crispy bacon, consider baking it in the oven. Experiment with different breads for varied flavors.
