Ingredients

- 1 medium spaghetti squash
- 8 oz Boursin cheese (herbed or garlic)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside with olive oil and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for about 30-40 minutes, or until tender.
- Once cooked, remove from the oven and let it cool slightly.
- Carefully scrape the flesh with a fork to create ‘noodles’.
- In a pan over medium heat, mix the spaghetti squash noodles with Boursin cheese until well combined and heated through.
- Serve warm, garnished with fresh herbs if desired.
Notes
Store leftovers in an airtight container for up to 3 days. You can freeze the mixture for up to one month.
