Description

A creamy, herb-infused spaghetti squash dish combining the wholesome goodness of squash with bold Boursin cheese flavors.


Ingredients

Scale
  • 1 medium spaghetti squash
  • 8 oz Boursin cheese (herbed or garlic)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside with olive oil and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for about 30-40 minutes, or until tender.
  5. Once cooked, remove from the oven and let it cool slightly.
  6. Carefully scrape the flesh with a fork to create ‘noodles’.
  7. In a pan over medium heat, mix the spaghetti squash noodles with Boursin cheese until well combined and heated through.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container for up to 3 days. You can freeze the mixture for up to one month.
