A delightful fusion of Southern barbecue and sweet peaches, this Grilled Bourbon Peach BBQ Chicken is bursting with flavor and perfect for summer gatherings.

- 6 chicken thighs (boneless, skin on or off)
- 3 peaches (cored, quartered)
- 1 peach (skin off, cored, diced)
- 1 tsp sugar
- 1/2 cup barbeque sauce
- 3 tbsp bourbon
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Mix the ingredients for the spice rub and coat the chicken evenly.
- Bring a saucepan with one diced peach and sugar to a boil, then simmer for 5 minutes.
- Add the barbeque sauce and bourbon, then simmer for another 5 minutes.
- Puree the sauce with an immersion blender or regular blender and set aside.
- Preheat the grill on medium-high heat.
- Grill the chicken for 3-5 minutes on each side.
- Brush bourbon peach BBQ sauce on the chicken and cook for 1 minute on each side.
- Repeat with one more coating of bourbon peach BBQ sauce.
- Check that the chicken is fully cooked when it reaches 165°F.
- While the chicken is resting, brush the remaining peaches with bourbon peach BBQ sauce and grill for 1-2 minutes on each side.
- Serve immediately with extra sauce on the side.
Notes
Marinate the chicken for enhanced flavor, and use ripe, fresh peaches for the best taste.
