Description

A delicious blend of cinnamon rolls infused with bourbon and topped with candied bacon, perfect for breakfast or brunch.


Ingredients

  • 1/2 cup brown sugar
  • 4 tablespoons maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon cracked black pepper
  • 1/4 cup all-purpose flour
  • 3/4 cup water
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 3/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong from above
  • 4 tablespoons unsalted butter (softened)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup light brown sugar
  • 2 teaspoons cinnamon
  • 1 cup candied bacon strips
  • 4 tablespoons unsalted butter (room temperature)
  • 2 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1/2 – 1 teaspoon bourbon
  • 1/2 cup candied bacon strips (for the tops)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a rimmed baking sheet with foil for easy cleanup.
  3. Arrange the bacon slices in a single layer on the sheet.
  4. Mix together brown sugar, maple syrup, bourbon, and cracked black pepper.
  5. Brush the mixture over the bacon slices generously.
  6. Bake for about 15-20 minutes, until caramelized and crispy.
  7. Remove from the oven and let cool, then chop into small, bite-sized pieces.
  8. Combine water and flour in a small saucepan; whisk until smooth.
  9. Cook over medium heat for about 3-5 minutes, stirring constantly until it thickens; this is your Tangzhong.
  10. In a large bowl, mix 3 1/2 cups all-purpose flour, granulated sugar, instant yeast, and sea salt.
  11. Add the whole milk, egg, and Tangzhong to the dry ingredients; stir until a dough forms.
  12. Knead the dough for about 8-10 minutes on a floured surface until smooth and elastic.
  13. Place the dough in a lightly greased bowl; cover and let rise until doubled in size (about 1-2 hours).
  14. Roll out the dough on a floured surface into a large rectangle (approximately 18×12 inches).
  15. Spread the softened butter over the surface of the dough.
  16. Mix light brown sugar and cinnamon in a bowl; sprinkle over the butter.
  17. Evenly distribute the chopped candied bacon over the sugar mixture.
  18. Starting from one edge, carefully roll up the dough and slice into equal pieces.
  19. Place the rolls into a greased baking dish; cover and let rise until doubled (about 30-45 minutes).
  20. Preheat your oven to 375°F (190°C).
  21. Bake the rolls for 25-30 minutes or until golden brown.
  22. While baking, prepare the cream cheese frosting by combining the butter, cream cheese, powdered sugar, maple syrup, and bourbon; beat until smooth.
  23. Let the rolls cool slightly, then spread the frosting generously over the top.
