Ingredients

  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 10 egg roll wrappers
  • Oil for frying


Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the fresh blueberries.
  3. Place an egg roll wrapper on a clean surface and spoon 2 tablespoons of the blueberry cream cheese mixture onto the center.
  4. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal.
  5. Repeat with the remaining wrappers and filling.
  6. Heat oil in a deep pan over medium heat.
  7. Fry the egg rolls in batches until golden brown, about 2-3 minutes per side.
  8. Remove and drain on paper towels.
  9. Serve warm, optionally dusted with powdered sugar.
