Description

Delicate crepes filled with a luscious cream cheese blend and sweet blueberries, perfect for a special breakfast.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Whisk together flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  3. Pour about 1/4 cup of the batter into the skillet, tilting to spread it evenly.
  4. Cook for 1-2 minutes until the edges lift and the surface is set, then flip and cook for another minute.
  5. Mix cream cheese, powdered sugar, blueberries, and vanilla in another bowl until combined.
  6. Place a spoonful of the cream cheese mixture on each crepe, fold it, and serve warm.

Notes

Let the batter rest for at least 30 minutes for a smoother texture.
