Description

A heartwarming dish featuring tender chicken, crispy bacon, and a luscious coconut cream sauce, perfect for cozy dinners.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 strips of bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/2 cup coconut cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Cook in a skillet over medium heat, cook the bacon until crispy. Remove and crumble when cool.
  2. Add in the same skillet, add olive oil and cook the chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Season with salt and pepper.
  3. Sauté add minced garlic to the skillet and sauté for 1 minute.
  4. Stir in coconut cream and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
  5. Combine remove from heat and stir in crumbled bacon and chopped lettuce.
  6. Serve warm.

Notes

Store in an airtight container for up to 3 days. Not recommended for freezing.
