Description

Delightful rolls bursting with juicy blackberries and a hint of vanilla, perfect for a quick and easy treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup buttermilk
  • 1 cup fresh blackberries
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with butter or non-stick spray.
  3. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  4. Melt the butter and allow it to cool slightly.
  5. Add the melted butter, buttermilk, and vanilla extract to the dry ingredients.
  6. Mix until just combined, ensuring not to overwork the dough.
  7. Gently fold in the fresh blackberries.
  8. Turn the dough out onto a lightly floured surface.
  9. Knead the dough gently for about 1 minute until it comes together.
  10. Roll the dough into a rectangle, about 1/2 inch thick.
  11. Cut the rectangle into strips.
  12. Roll each strip up, starting from one end to create rolls.
  13. Place the rolls in the greased baking dish, leaving a bit of space between each.
  14. Bake for 20-25 minutes until golden brown.
  15. Allow to cool for 5-10 minutes before glazing.
  16. Whisk together the powdered sugar and milk until smooth to create the glaze.
  17. Drizzle the glaze over the warm rolls.
