Description

A delightful fusion of nutty pistachios and sweet-tart blackberry preserves, perfect for any occasion.


Ingredients

Scale
  • 1 cup crushed pistachios
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup blackberry preserves
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix crushed pistachios, flour, sugar, and melted butter until crumbly.
  3. Press the crumb mixture into the bottom of the prepared baking dish to form a crust.
  4. Beat eggs, vanilla extract, and salt together in another bowl.
  5. Add in the blackberry preserves and mix until combined.
  6. Pour the blackberry mixture over the crust.
  7. Bake in the preheated oven for 25-30 minutes, or until set.
  8. Allow to cool before cutting into bars and serving.

Notes

For a lower sugar option, consider using stevia or monk fruit as substitutes.
