Description
A creamy, luscious no-bake panna cotta topped with vibrant red berry coulis, perfect for any occasion.
Ingredients

- 4 leaves gelatin (1.5 gram each or 0.05 ounce)
- 500 ml double cream
- 2 tsp vanilla extract
- 50 grams fine granulated sugar
- 200 grams red berries
- 4 tbsp water
- 2 tbsp sugar
- 100 grams red fruit
Instructions
- Soften the 4 leaves of gelatin by placing them in a bowl of cold water for about 5–10 minutes.
- Heat 500 ml of double cream in a saucepan over low-medium heat.
- Add 2 tsp of vanilla extract and 50 grams of fine granulated sugar to the cream, stirring continuously until the sugar dissolves.
- Remove the saucepan from heat and drain the softened gelatin. Stir it into the warm cream mixture until fully dissolved.
- Pour the mixture into serving glasses or molds.
- Refrigerate for at least 240 minutes or until set.
- Prepare the red berry coulis: Combine 200 grams of red berries with 4 tbsp of water and 2 tbsp of sugar in a small saucepan.
- Cook over medium heat until the berries break down and the mixture thickens slightly.
- Remove from heat and allow the coulis to cool.
- Blend the mixture if a smooth consistency is preferred, or leave it chunky for texture.
- Serve the panna cotta with a drizzle of berry coulis and a sprinkle of fresh berries on top.
Notes
For people with diabetes, consider using sugar substitutes like stevia, monk fruit, or allulose.
