Description

A vibrant and nutritious blend of roasted beets, chickpeas, and garlic, perfect for any occasion.


Ingredients

Scale
  • 1 cup cooked chickpeas
  • 1 medium beet, roasted and peeled
  • 1 clove garlic, minced
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Prepare the roasted beet by wrapping it in aluminum foil and placing it in a preheated oven at 400°F for about 45 minutes, or until tender.
  2. Allow the beet to cool, then peel off the skin and chop it into smaller pieces.
  3. Combine the chickpeas, roasted beet, minced garlic, tahini, lemon juice, and olive oil in a food processor.
  4. Blend on high speed until smooth, scraping down the sides as needed.
  5. Season with salt to taste; feel free to adjust the lemon juice for extra tang.
  6. Transfer the hummus into a bowl and garnish with fresh herbs, if desired.

Notes

For creamier hummus, add a little water while blending to reach your preferred consistency.
