- 1 cup cooked chickpeas
- 1 medium beet, roasted and peeled
- 1 clove garlic, minced
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt, to taste
- Fresh herbs (optional, for garnish)
Instructions
- Prepare the roasted beet by wrapping it in aluminum foil and placing it in a preheated oven at 400°F for about 45 minutes, or until tender.
- Allow the beet to cool, then peel off the skin and chop it into smaller pieces.
- Combine the chickpeas, roasted beet, minced garlic, tahini, lemon juice, and olive oil in a food processor.
- Blend on high speed until smooth, scraping down the sides as needed.
- Season with salt to taste; feel free to adjust the lemon juice for extra tang.
- Transfer the hummus into a bowl and garnish with fresh herbs, if desired.
Notes
For creamier hummus, add a little water while blending to reach your preferred consistency.
