Description

A classic slow cooker dish featuring tender beef brisket cooked in a rich, flavorful gravy.


Ingredients

  • 45 lb beef brisket, fat cap trimmed to about 1/4 inch
  • 2 1/2 tsp kosher salt
  • 1 1/2 tsp freshly ground black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 6 cloves garlic, smashed
  • 1 1/2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 2 bay leaves
  • Optional: 1/2 tsp liquid smoke or 1 tsp espresso powder


Instructions

  1. Pat the brisket dry with paper towels and trim the fat cap to about 1/4 inch thickness.
  2. Mix together salt, pepper, paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and thyme in a small bowl. Rub this spice mixture all over the brisket to coat it evenly.
  3. Heat olive oil in a large skillet over medium-high heat and sear the brisket for 3-4 minutes on each side until browned.
  4. Transfer the brisket to a slow cooker.
  5. Sauté onions in the skillet for 3-4 minutes, then add smashed garlic and cook for another 30 seconds.
  6. Stir in beef broth, tomato paste, Worcestershire sauce, and apple cider vinegar, bring to a simmer for about 1 minute, then pour the mixture over the brisket.
  7. Add bay leaves and optional ingredients if using, cover, and cook on Low for 8-10 hours or on High for 5-6 hours until fork-tender.
  8. Remove the brisket, let it rest for 20 minutes, then slice or shred.
  9. Strain the cooking liquid to remove solids and thicken for gravy if desired.
  10. Serve warm with gravy and sautéed onions.

Use high-quality brisket for best results. Don’t rush the cooking time, as low and slow guarantees juicy outcomes.
