Instructions

- Wash the sweet potatoes and prick them with a fork.
- Bake in the oven for about 45-60 minutes until tender, or cook in an air fryer for about 25 minutes, or use the Instant Pot according to manufacturer’s instructions.
- Mix the shredded chicken with barbecue sauce, salt, and pepper in a bowl.
- Let the sweet potatoes cool slightly, then cut them open lengthwise and fluff the insides with a fork.
- Spoon the BBQ chicken mixture into the sweet potatoes.
- Top with green onions and cheese if desired.
- Serve warm.
