Description

A delicious fusion of smoky grilled chicken, fresh veggies, and hearty grains, perfect for family gatherings or a quick weeknight dinner.


Ingredients

  • 2 cups cooked brown rice
  • 1 pound chicken breasts
  • 1 cup BBQ sauce
  • 1 cup diced bell peppers
  • 1 cup corn
  • 1 can black beans, drained and rinsed
  • ½ cup shredded cheese (optional)
  • ¼ cup sliced green onions
  • 1 avocado, sliced
  • Salt and pepper to taste


Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  4. Brush the chicken with BBQ sauce during the last few minutes of cooking.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. Dice the grilled chicken into bite-sized pieces.
  7. In a large bowl, combine the cooked brown rice, diced bell peppers, corn, and black beans.
  8. Mix in half of the remaining BBQ sauce.
  9. Divide the rice mixture among bowls.
  10. Top each bowl with diced chicken, cheese, green onions, and avocado.
  11. Drizzle with more BBQ sauce if desired.
  12. Serve immediately and enjoy!
