- 1 pound chicken breasts
- 1 cup BBQ sauce
- 1 cup diced bell peppers
- 1 cup corn
- 1 can black beans, drained and rinsed
- ½ cup shredded cheese (optional)
- ¼ cup sliced green onions
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until cooked through.
- Brush the chicken with BBQ sauce during the last few minutes of cooking.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Dice the grilled chicken into bite-sized pieces.
- In a large bowl, combine the cooked brown rice, diced bell peppers, corn, and black beans.
- Mix in half of the remaining BBQ sauce.
- Divide the rice mixture among bowls.
- Top each bowl with diced chicken, cheese, green onions, and avocado.
- Drizzle with more BBQ sauce if desired.
