Description

Crispy, golden, and perfectly seasoned, these Bangin’ Breakfast Potatoes are a delightful side dish that adds warmth to any meal.


Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 2-3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh Rosemary, chopped
  • 1 teaspoon Paprika
  • Salt and Pepper, to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly under running water to remove any dirt.
  3. Dice the potatoes into evenly sized cubes, about 1-inch in thickness.
  4. Place the diced potatoes in a large mixing bowl.
  5. Drizzle olive oil over the potatoes, ensuring they’re evenly coated.
  6. Add minced garlic, chopped rosemary, paprika, salt, and pepper to the bowl.
  7. Toss everything gently to combine the ingredients.
  8. Spread the seasoned potatoes onto a large baking sheet in a single layer.
  9. Bake in the preheated oven for about 30-35 minutes, flipping them halfway through, until golden and crispy.
  10. Allow to cool for a few minutes before serving.

Notes

For best results, use fresh Yukon Gold potatoes and avoid overcrowding the baking sheet.
