Description

A flavorful and colorful dish combining chicken, vegetables, and Bang Bang sauce, perfect for quick weeknight dinners.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup diced chicken
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons Bang Bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Green onions for garnish


Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add diced chicken and cook until browned.
  3. Push the chicken to the side of the pan and add the beaten eggs, scrambling them until fully cooked.
  4. Add the mixed vegetables and stir-fry for a couple of minutes.
  5. Add the cooked rice, soy sauce, and Bang Bang sauce, stirring until everything is well combined and heated through.
  6. Garnish with chopped green onions and serve hot.

Notes

For best results, use day-old rice to prevent mushiness.
