Description

A delightful dessert of caramelized bananas in a rich rum sauce, served over vanilla ice cream.


Ingredients

  • ⅓ cup light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¼ cup dark rum
  • 2 medium bananas (sliced lengthwise, then cut in quarters)
  • ¼ cup chopped walnuts
  • 2 cups vanilla ice cream


Instructions

  1. Melt the butter in a medium-sized skillet over medium-low heat.
  2. Add the brown sugar and whisk until it dissolves (about 3 minutes).
  3. Add the vanilla extract, cinnamon, and rum, cooking for an additional 5-7 minutes until thick.
  4. Slice the bananas while the sauce cooks.
  5. Once the mixture bubbles, reduce heat to low and add the bananas. Cook for 2-3 minutes.
  6. Remove from heat, stir in walnuts, and let cool slightly to thicken.
  7. Portion ½ cup of vanilla ice cream into 4 dessert bowls.
  8. Divide the bananas foster equally among the bowls and serve immediately.
