Description

Delicious baked salmon meatballs paired with a creamy avocado sauce, perfect for a quick dinner or gathering.


Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 avocado
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/4 cup Greek yogurt
  • Salt to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine in a food processor the salmon fillet, almond flour, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Pulse until well combined.
  3. Shape the mixture into meatballs and place them on the prepared baking sheet.
  4. Bake for about 15-20 minutes or until cooked through and golden brown.
  5. Blend together in a blender the avocado, lime juice, olive oil, Greek yogurt, and salt until smooth.
  6. Serve the baked salmon meatballs with the avocado sauce.
