- 1 lb salmon fillet, skin removed
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 avocado
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/4 cup Greek yogurt
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine in a food processor the salmon fillet, almond flour, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Pulse until well combined.
- Shape the mixture into meatballs and place them on the prepared baking sheet.
- Bake for about 15-20 minutes or until cooked through and golden brown.
- Blend together in a blender the avocado, lime juice, olive oil, Greek yogurt, and salt until smooth.
- Serve the baked salmon meatballs with the avocado sauce.
