Description

A delightful fusion of creamy goat cheese and ripe avocado atop crisp cucumber slices, perfect for appetizers.


Ingredients

Scale
  • 2 ounces fresh goat cheese
  • 1 ripe medium avocado
  • Dash of Tabasco sauce
  • 1 teaspoon lemon juice (or more to taste)
  • Pinch of salt
  • 1 1/2 medium English cucumbers, cut into 1 1/2 inch slices
  • 1-2 sundried tomatoes or roasted red peppers, chopped finely
  • Parsley for garnish


Instructions

  1. Mash in a medium-size bowl, together the ripe avocado and fresh goat cheese until a smooth mixture forms.
  2. Add a dash of Tabasco sauce, the lemon juice, and a pinch of salt, then mix well to combine. Taste and adjust seasoning if needed.
  3. Wash the English cucumbers and slice them into approximately 15 pieces, each about 1 ½ inches thick.
  4. Place the avocado and goat cheese mixture onto each cucumber slice using a spoon or piping bag.
  5. Top each with a small piece of finely chopped sundried tomato or roasted red pepper.
  6. Finish by adding a sprig of fresh parsley atop each appetizer.
  7. Serve immediately for the best flavor and texture.
