- 2 ripe avocados
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs

Instructions
- Preheat oven to 425°F (220°C).
- Cut the avocados in half, remove the pit, and slice each half into wedges.
- In one bowl, place the flour; in a second bowl, whisk the eggs; and in a third bowl, place the panko breadcrumbs mixed with salt and pepper.
- Dredge each avocado slice in flour, dip in the beaten eggs, and finally coat with panko breadcrumbs.
- Place the coated avocado slices on a baking sheet lined with parchment paper.
- Spray or brush the slices with olive oil.
- Bake for 15-20 minutes until golden brown and crispy.
