Description

Transform creamy avocado into crunchy, golden bites with this simple and delicious baked recipe that offers a healthy twist on traditional fries.


Ingredients

Scale
  • 2 ripe avocados
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil spray or oil for brushing


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut the avocados in half, remove the pit, and slice each half into wedges.
  3. In one bowl, place the flour; in a second bowl, whisk the eggs; and in a third bowl, place the panko breadcrumbs mixed with salt and pepper.
  4. Dredge each avocado slice in flour, dip in the beaten eggs, and finally coat with panko breadcrumbs.
  5. Place the coated avocado slices on a baking sheet lined with parchment paper.
  6. Spray or brush the slices with olive oil.
  7. Bake for 15-20 minutes until golden brown and crispy.
