Ingredients

  • 1 cup granulated sugar
  • 1 cup gluten-free flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1 cup egg whites (about 8-10 eggs)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the gluten-free flour, sugar, and salt in a bowl.
  3. Whip the egg whites and cream of tartar in a separate bowl until stiff peaks form.
  4. Gently fold the flour mixture into the whipped egg whites, being careful not to deflate the mixture.
  5. Add vanilla extract and almond extract, folding until just combined.
  6. Pour the batter into an ungreased angel food cake pan and smooth the top.
  7. Bake for about 35-40 minutes, or until the cake is golden and springs back when touched.
  8. Invert the pan to cool completely before removing the cake.
  9. Serve plain or with fresh fruit and whipped cream.

Notes

Use room temperature egg whites for better volume and texture. Avoid greasing the pan for proper rising.
