- 1/2 teaspoon cream of tartar
- 1 cup egg whites (about 8-10 eggs)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the gluten-free flour, sugar, and salt in a bowl.
- Whip the egg whites and cream of tartar in a separate bowl until stiff peaks form.
- Gently fold the flour mixture into the whipped egg whites, being careful not to deflate the mixture.
- Add vanilla extract and almond extract, folding until just combined.
- Pour the batter into an ungreased angel food cake pan and smooth the top.
- Bake for about 35-40 minutes, or until the cake is golden and springs back when touched.
- Invert the pan to cool completely before removing the cake.
- Serve plain or with fresh fruit and whipped cream.
Notes
Use room temperature egg whites for better volume and texture. Avoid greasing the pan for proper rising.
