Description

Quick and flavorful tacos made with shrimp, bell peppers, and fajita seasoning, cooked in an air fryer for a convenient weeknight meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 small tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lime wedges and cilantro for serving


Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Combine shrimp, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper in a bowl. Toss to coat the shrimp and vegetables well.
  3. Place the mixture in the air fryer basket in a single layer.
  4. Cook for about 8-10 minutes, shaking the basket halfway through, until shrimp are cooked through and vegetables are tender.
  5. Warm the tortillas in the air fryer or on a skillet.
  6. Fill the tortillas with the shrimp and vegetable mixture.
  7. Serve with lime wedges and cilantro.

Notes

For extra flavor, consider marinating the shrimp in the fajita seasoning for 30 minutes before cooking.
