Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots, potatoes, and tomato paste, mixing well.
  5. Pour in the beef broth and add Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Adjust seasoning as needed before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day in advance for better flavor.
