Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup white chocolate chips
  • 1 cup fresh raspberries
  • 1/4 cup raspberry puree


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing on low speed until just blended.
  5. Melt the white chocolate chips in a microwave or double boiler, then let cool slightly before adding to the cream cheese mixture.
  6. Pour half of the cream cheese mixture over the crust. Swirl in raspberry puree and fresh raspberries. Top with the remaining cream cheese mixture.
  7. Bake for 55-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use high-quality white chocolate.
  • Make sure the cream cheese is at room temperature for a smooth batter.
  • Garnish with additional raspberries and white chocolate shavings before serving.
