- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup white chocolate chips
- 1 cup fresh raspberries
- 1/4 cup raspberry puree
Instructions
- Preheat the oven to 325°F (165°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing on low speed until just blended.
- Melt the white chocolate chips in a microwave or double boiler, then let cool slightly before adding to the cream cheese mixture.
- Pour half of the cream cheese mixture over the crust. Swirl in raspberry puree and fresh raspberries. Top with the remaining cream cheese mixture.
- Bake for 55-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use high-quality white chocolate.
- Make sure the cream cheese is at room temperature for a smooth batter.
- Garnish with additional raspberries and white chocolate shavings before serving.
