Description

A light and airy dessert combining the sweetness of white chocolate with the tartness of raspberries.


Ingredients

Scale
  • 8 oz white chocolate, chopped
  • 1 cup heavy cream
  • 1 cup raspberries, fresh or frozen
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons water


Instructions

  1. In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
  2. In a heatproof bowl, melt the white chocolate over a double boiler, stirring until smooth.
  3. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  4. In a separate bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the melted chocolate mixture into the whipped cream.
  6. In another bowl, mash the raspberries with sugar and vanilla extract.
  7. Fold the raspberry mixture into the chocolate mousse until combined.
  8. Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • For a stronger raspberry flavor, add more raspberries to the mixture.
  • Can be garnished with additional raspberries or white chocolate shavings.
  • Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
