Description
A light and airy dessert combining the sweetness of white chocolate with the tartness of raspberries.
Ingredients

- 8 oz white chocolate, chopped
- 1 cup heavy cream
- 1 cup raspberries, fresh or frozen
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin
- 3 tablespoons water
Instructions
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
- In a heatproof bowl, melt the white chocolate over a double boiler, stirring until smooth.
- Remove from heat and stir in the bloomed gelatin until fully dissolved.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the melted chocolate mixture into the whipped cream.
- In another bowl, mash the raspberries with sugar and vanilla extract.
- Fold the raspberry mixture into the chocolate mousse until combined.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a stronger raspberry flavor, add more raspberries to the mixture.
- Can be garnished with additional raspberries or white chocolate shavings.
- Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
