These Whipped Sweet Potatoes

Description

Luxuriously creamy, lightly sweet, and beautifully smooth whipped sweet potatoes blended with mascarpone cheese and maple syrup.


Ingredients

Scale
  • 2 pounds sweet potatoes
  • 1/2 cup mascarpone cheese
  • 1/4 cup pure maple syrup
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Peel and chop the sweet potatoes into chunks.
  2. Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and return them to the pot.
  4. Add the mascarpone cheese, maple syrup, milk, salt, and pepper to the sweet potatoes.
  5. Using a hand mixer or potato masher, whip the sweet potatoes until smooth and creamy.
  6. Taste and adjust seasoning if necessary.
  7. Serve warm as a side dish.

Notes

  • For a richer flavor, use brown sugar instead of maple syrup.
  • Can be made ahead of time and reheated before serving.
  • Garnish with chopped pecans or a drizzle of maple syrup if desired.
