Luxuriously creamy, lightly sweet, and beautifully smooth whipped sweet potatoes blended with mascarpone cheese and maple syrup.

- 2 pounds sweet potatoes
- 1/2 cup mascarpone cheese
- 1/4 cup pure maple syrup
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Peel and chop the sweet potatoes into chunks.
- Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot.
- Add the mascarpone cheese, maple syrup, milk, salt, and pepper to the sweet potatoes.
- Using a hand mixer or potato masher, whip the sweet potatoes until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Serve warm as a side dish.
Notes
- For a richer flavor, use brown sugar instead of maple syrup.
- Can be made ahead of time and reheated before serving.
- Garnish with chopped pecans or a drizzle of maple syrup if desired.
