Description

Refreshing watermelon lemon mint popsicles perfect for hot summer days.


Ingredients

Scale
  • 4 cups watermelon, cubed
  • 1/2 cup lemon juice
  • 1/4 cup fresh mint leaves
  • 1/4 cup honey or sugar (optional)
  • 1 cup water


Instructions

  1. Combine in a blender the watermelon, lemon juice, mint leaves, and sugar (if using). Blend until smooth.
  2. Strain the mixture through a fine mesh sieve to remove any pulp, if desired.
  3. Pour the mixture into popsicle molds, leaving a little space at the top.
  4. Insert sticks and freeze for at least 240 minutes or until solid.
  5. Run warm water over the outside of the molds for a few seconds to release the popsicles. Enjoy your refreshing popsicles!

Notes

For a sugar-free version, consider using stevia, monk fruit, or allulose instead of honey or sugar.
