Description

Delicious and crispy shredded beef tacos served with fresh guacamole.


Ingredients

Scale
  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • Oil for frying
  • 1 avocado
  • 1 lime, juiced
  • Salt to taste


Instructions

  1. In a slow cooker, combine beef, onion, garlic, cumin, chili powder, salt, and pepper.
  2. Cook on low for 8 hours or until beef is tender.
  3. Shred the beef with two forks and set aside.
  4. Heat oil in a pan over medium heat.
  5. Fry the tortillas until crispy, then fill with shredded beef.
  6. For guacamole, mash avocado, mix in lime juice and salt.
  7. Top tacos with guacamole and serve immediately.
