  • 1 cup green or brown lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery, and sauté until softened.
  4. Stir in the minced garlic and ground turmeric, cooking for an additional minute.
  5. Add the rinsed lentils and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
  7. Stir in the lemon juice and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
