- 1 cup unsalted butter (brown butter)
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 2 teaspoons vanilla bean paste
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- Melt the butter in a saucepan over medium heat and continue to cook until it turns golden brown, stirring frequently. Remove from heat and let cool slightly.
- Whisk together the granulated sugar, brown sugar, and browned butter until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla bean paste.
- Sift together the flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.
- Fill the cupcake liners about two-thirds full with batter and bake for 18-20 minutes, or until a toothpick comes out clean. Let cool before frosting.
- For the frosting, brown some butter and whip it with powdered sugar until fluffy. Frost cooled cupcakes and enjoy.
Notes
Replace sugars with stevia or monk fruit for a diabetic-friendly version. Store in an airtight container for up to 5 days.
