Delicious and festive Linzer cookies perfect for Valentine’s Day.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, almond flour, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut out shapes using a cookie cutter, making sure to cut out the center of half of the cookies.
- Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let the cookies cool completely before spreading raspberry jam on the solid cookies and topping with the cut-out cookies.
- Dust with powdered sugar before serving.

- For a nut-free version, substitute almond flour with more all-purpose flour.
