Description
A hearty and flavorful soup combining sausage and potatoes with Tuscan spices.
Ingredients

- 1 lb Italian sausage
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups kale, chopped
- 1 tsp dried oregano
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the Italian sausage, breaking it up with a spoon, and cook until browned.
- Stir in the diced potatoes, chicken broth, diced tomatoes, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
- Add the chopped kale and cook for an additional 5 minutes.
- Serve hot and enjoy!
