Description

A hearty and flavorful soup combining sausage and potatoes with Tuscan spices.


Ingredients

Scale
  • 1 lb Italian sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups kale, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the Italian sausage, breaking it up with a spoon, and cook until browned.
  3. Stir in the diced potatoes, chicken broth, diced tomatoes, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
  5. Add the chopped kale and cook for an additional 5 minutes.
  6. Serve hot and enjoy!
