Description

Ingredients

  • 8 oz Pasta (Any type like spaghetti or penne)
  • 8 oz Mushrooms (Fresh varieties such as cremini or shiitake)
  • 2 tbsp Olive Oil (Can substitute with butter)
  • 2-3 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach (Can substitute with kale)
  • 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
  • To taste Salt
  • To taste Pepper


Instructions

  1. Boil a large pot of salted water and add the pasta. Cook according to package instructions until al dente.
  2. Drain the pasta and set it aside, reserving a cup of the pasta water.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the mushrooms and cook until they become tender and brown, about 5-7 minutes.
  6. Stir in the fresh spinach and cook until wilted.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Add the cooked pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a creamy sauce.
  9. Stir in Parmesan cheese and season with salt and pepper to taste.
  10. Serve immediately, garnished with extra cheese if desired.
