- 2 cups Fresh Spinach (Can substitute with kale)
- 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
- 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)

Instructions
- Boil a large pot of salted water and add the pasta. Cook according to package instructions until al dente.
- Drain the pasta and set it aside, reserving a cup of the pasta water.
- Heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the mushrooms and cook until they become tender and brown, about 5-7 minutes.
- Stir in the fresh spinach and cook until wilted.
- Pour in the heavy cream and bring to a gentle simmer.
- Add the cooked pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a creamy sauce.
- Stir in Parmesan cheese and season with salt and pepper to taste.
- Serve immediately, garnished with extra cheese if desired.
