A refreshing and flavorful salad made with potatoes and a variety of fresh vegetables, perfect for any meal.
Ingredients

- 4 medium potatoes
- 1 cup green peas
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, then drain and let cool.
- Once cooled, peel and dice the potatoes into bite-sized pieces.
- In a large bowl, combine the diced potatoes, green peas, red bell pepper, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
