Ingredients

  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced tomatoes
  • 1 cup cauliflower rice
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil over medium heat in a skillet. Add chopped onion, bell pepper, and garlic. Sauté until softened.
  3. Add ground turkey to the skillet and cook until browned. Season with Italian seasoning, salt, and pepper.
  4. Stir in diced tomatoes and cauliflower rice until mixed well.
  5. Transfer to a baking dish and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and slightly golden.
