- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
- 1 tablespoon chopped fresh chives
- 1 tablespoon crumbled bacon (optional)
Instructions
- Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- Cool the eggs in ice water for 5 minutes, then peel and slice them in half lengthwise.
- Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
- Fold in chopped chives and crumbled bacon if using.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Garnish with additional chives or bacon if desired and serve chilled.
Notes
- For a spicier kick, add a dash of hot sauce to the yolk mixture.
- These can be made a day in advance; just keep them covered in the refrigerator.
