Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon crumbled bacon (optional)

Instructions

  1. Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. Cool the eggs in ice water for 5 minutes, then peel and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
  4. Fold in chopped chives and crumbled bacon if using.
  5. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  6. Garnish with additional chives or bacon if desired and serve chilled.

Notes

  • For a spicier kick, add a dash of hot sauce to the yolk mixture.
  • These can be made a day in advance; just keep them covered in the refrigerator.
