- 1 lb ground beef
- 1 onion, chopped
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained
- 1 cup corn
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 package (8 oz) cornbread mix
- 1 cup milk
- 1 egg
- 1 cup shredded cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef and onion over medium heat until the meat is cooked through.
- Add the tomato sauce, kidney beans, corn, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and let simmer for 5 minutes.
- In a separate bowl, mix the cornbread mix, milk, and egg until well combined.
- Spread the beef mixture in a greased pie dish.
- Pour the cornbread batter over the beef mixture.
- Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown.
- Sprinkle shredded cheese on top and return to the oven for an additional 5 minutes until the cheese is melted.
- Let cool for a few minutes before serving.
Notes
- Can substitute ground turkey for a leaner option.
- Add jalapeños for extra heat.
- Serve with sour cream and salsa on the side.
