Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 bell pepper, chopped
  • 1 cup diced potatoes

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, kidney beans, corn, and beef broth.
  4. Add the chili powder, cumin, salt, and pepper, mixing well.
  5. Incorporate the chopped bell pepper and diced potatoes into the stew.
  6. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes, or until the potatoes are tender.
  7. Serve hot and enjoy your Texas Cowboy Stew!
