Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchinis, corn, black beans, diced tomatoes, olive oil, chili powder, cumin, salt, and pepper.
  3. Layer half of the zucchini mixture in a greased baking dish.
  4. Sprinkle half of the cheese over the first layer.
  5. Add the remaining zucchini mixture on top and finish with the remaining cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

  • Feel free to add other vegetables like bell peppers or onions for extra flavor.
