- 4 medium zucchinis, sliced
- 1 cup corn kernels
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchinis, corn, black beans, diced tomatoes, olive oil, chili powder, cumin, salt, and pepper.
- Layer half of the zucchini mixture in a greased baking dish.
- Sprinkle half of the cheese over the first layer.
- Add the remaining zucchini mixture on top and finish with the remaining cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
