Description

A delicious and refreshing dish featuring grilled chicken marinated in a tangy honey lime sauce, served over a bed of creamy avocado rice.


Ingredients

Scale
  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 avocado
  • 1 cup cooked rice
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix honey and lime juice to create the marinade.
  2. Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
  3. Grill the marinated chicken until fully cooked, about 6-7 minutes per side.
  4. While the chicken is grilling, mash the avocado and mix it with the cooked rice and chopped cilantro.
  5. Season the avocado rice with salt and pepper to taste.
  6. Once the chicken is cooked, slice it and layer it over the avocado rice.
  7. Serve immediately and enjoy!

Notes

  • For extra flavor, add lime zest to the marinade.
  • Can substitute chicken with tofu for a vegetarian option.
  • Adjust the sweetness of the marinade by adding more or less honey.
